What’s your favorite way to eat breakfast? ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 👉🏻 In the Philippines, we like to do the longsilog which composes of Longganisa (sweet sausage), sinangag (fried rice) & itlog 🍳 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 👉🏻 I normally don’t buy the commercially prepared Filipino breakfast meats because of the preservatives & sugar content. Pressure cooker Keto Leche Flan

Recipe Ingredients:  2 cans of Evaporated Milk  10 Tbsp of  powdered erythritol Lakanto  1 cup of Lakanto Golden 2 cups water 9 egg yolks 1 egg 1 tsp vanilla  2 tbsp butter  Directions:  1. First make your keto condensed milk by mixing 1 can evaporated milk in saucepan & add your 10 tbsp Powdered Lakanto. Simmer in medium heat stirring until mixture becomes thick consistency ( about 30 min) . Remove from heat & add 2 Tbsp butter. Set aside. 2. In a large bowl, add 9 egg yolks , 1 egg & beat. Add your 1 can evaporated milk, keto condensed milk & vanilla. Gently mix.  3. Pour your mixture in a Ramekin that fits your pressure cooker.  Cover with foil.  4. Pour 1 1/2c water inside pot. Pressure Cooker Chicken Adobo with Gata

So throughout the years, I’ve tried different recipes of adobo but this pressure cooker version has yet to be my favorite one. It didn’t require any marinating, and it was the right taste of vinegar to soy sauce ratio. The addition of the coconut milk provided that hint of creaminess 🥥 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients:  2 lbs chicken thighs boneless  5 cloves garlic minced 3/4 c coconut milk 1/4 c white vinegar  1/4 c soy sauce  Salt & pepper  2 T coconut cream  1 med red onion chopped  3 dried bay leaves  Add 1/2 jalapeño for hint of spicy  Directions:  Set Pressure cooker to Saute mode. Add oil. Fry chicken for 5-7 minutes on each side until lightly brown. Add garlic & onions. Season with salt & pepper.  When onions are soft, add coconut milk, soy sauce & bay leaves & jalapeño. Close lid, set to 7 minutes on high pressure. Release vent and open lid. Stir & add in coconut cream. Season to taste.

Keto pancake breakfast sandwich

What new tasty creations have you made during quarantine? Have you seen the latest Tiktok breakfast sandwich? 🤣 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 👉🏻 Here I used @ketoandco pancake mix (Link in bio) and created a keto sandwich bread 🥪 on my @unprocessyourfood  Dash sandwich maker. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 👉🏻 Picture 2 I fried some scrambled egg on a pan and laid bread on top then flipped it.  Add sliced cheese then fold egg on top then add another keto bread slice. Flip again to grill other side & press down. ⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ 🧀 Tastes great with keto butter syrup!

Ginataang Kalabasa at Hipon Ingredients 1 c Peeled Raw Shrimp 1/2 White Onion Chopped 1T Minced Garlic 1T Bagoong Alamang (Shrimp Paste) 1 can Coconut Milk 3 c Kalabasa (Orange Squash) in cubes (3 inches) 1 c Green Beans or Sitaw cute in 3 inches length 1/2 c Spinach or Green leafy vegetable 1 T oil for pan Cooking Directions Heat oil in a deep pot. Saute Onions and Garlic to soften. Add Shrimp until it turns pink, remove shrimp and set aside in a bowl. Add bagoong to the pot and pour coconut milk. Mix. Let boil then simmer to medium low for 5 minutes or until reduced. Add Squash, cover and simmer for 7 minutes or until semi-soft. How to Make Cake Pops without a mold Ingredients: 1 box of Duncan Hines cake mix of your flavor. (Follow box recipe) 1 Tub of Vanilla frosting 1 package of semi sweet chocolate chips Vegetable oil to thin out chocolate if needed Cake Pop sticks that you can buy at the craft store Directions: Bake your favorite cake flavor and follow instructions on the box. Do not overbake, finish 5 min earlier. Put cooled cake in the blender or break into pieces by hand. In a large bowl, Add 1 tub of frosting cake icing of your choice and mix until moist. Shape into balls (1 inch) Freeze with Lollipop Sticks in the middle, recommended the night before. The next day, using a bowl, microwave the chocolate chips for about 30 seconds each time (90 seconds total) until smooth and fully melted.  Add a tablespoon of Vegetable oil to thin out. Jollibee fried peach mango pie

Hmmm.  I went to Jollibee in Jersey city, NJ to get one of the peach mango pies.  Unfortunately they were out, so I got the banana langka instead. Then I had one of those light bulb moments to make my own Peach mango pie.  Crazy huh?  The important thing was the filling.  The filling would be a little bit hard if the yellow ripe mangoes were out of season.  Luckily Del Monte now sells them in the little plastic cups.  Filling: 1 C of yellow sliced and cubed mangoes, ripe and peaches  or Del Monte cubed mangoes and peaches with syrup 2 T peach jam preserves 1T white sugar In a little saucepan, cook the mangoes in sugar for 1 minute in medium heat until mangoes soften.  Add the peach jam and mix. Simmer for another 1 minutes.   Transfer to a bowl and cool in refrigerator. TAHO

Nothing like a good comfort food than taho. It consists of extra soft tofu curd layered with tapioca pearls and brown syrup. You can buy this on the streets of the Philippines or Chinatown here in the US.  Here is my own version of this recipe: You'll need: 1 cup medium size Tapioca pearls, boiled 40-60 min in water until it is transparent. Drain and add cold water. 1 box of HOUSE Tofu mix (available at most Asian grocery or Amazon) 3 cups of dark brown and 4 cups  water, boiled 15 minutes until formed into a watery syrup but not sticky. To make the tofu mix: Boil 6 1/2 cups of water mixed with a packed of soybean milk powder. After 4 minutes, remove from heat and add coagulant. Cover. This will make the tofu  firm but soft, and you should be able to scoop it out in layers. Layer tofu, brown syrup, then tapioca until it reaches the top of the glass.  Serve best warm. Biko With Latik

Ingredients: 2 cups Glutinous Rice (grains) 1 3/4 cup Water 4 cups Coconut Milk (So Delicious, unsweetened) or dilute 1 can of coconut cream in 3 cups water 1 2/3 cup White or light brown sugar Directions: Cook Rice and water in Rice cooker. While rice is cooking, Mix the rest of the ingredients in a big wok or POT and boil. Reduce heat and wait till liquid thickens, while stirring occasionaly to about 3 cups. When rice is cooked, stir into the coconut milk mixtures and stir with a big wooden spoon, every 5-10 minutes to prevent from scorching. Mixture will be done after 20-30 minutes or when most of the milk has evaporated and you can see more of the rice and not of a soupy consistency. Prepare a 9x9 greased Pyrex pan and pour and flatten the rice mixture into it. Preheat oven to 400 F while you prepare the topping. Ingredients: 4 cups of Thin Coconut Milk (or So Delicious unsweetened coconut milk beverage) 2 plantain bananas ripe and sliced 1 can of jackfruit, drained and cut in pieces 2 sweet potatoes, peeled and cubed 1 ube cubed if available 2 cups of Gluntinous Rice balls (glutinous flour mixed with water and shaped into balls) 1 cup cooked Tapioca pearls (regular size) soaked in different food coloring 1 cup small uncooked Tapioca minis 2 cup white sugar 1 T dark brown sugar for coloring 1 tsp Vanilla essence To Cook: Boil Sweet potatoes and bananas in coconut milk about 5 min, then add jackfruit and mini tapioca pearls.  Also add rice balls and simmer covered in medium heat until rice balls float or done. Add white and brown sugar to taste. Simmer until slightly thickened, then add the cooked tapioca pearls (regular sized). You may add vanilla for flavoring. Cebu Steamed Rice Topping Dimsum style II

Ingredients: 1 whole boneless chicken breast (large) cut in 1 inch pcs 1-2 c shrimp cleaned and deveined (no shell) 5 Tablespoon low sodium soy sauce 2 Tablespoon msg free Oyster sauce 1/2 c frozen green peas, thawed chopped yellow onion, medium ground pepper for seasoning 1/2 Tablespoon sesame oil 1 cup Water 1 Tablespoon cornstarch dissolved in 1/2 cup water Directions: 1. Marinate chicken in soy sauce, oyster sauce and sesame oil for about 30 minutes in a bowl. Refrigerate. 2. In a large wok or deep frying pan, add 1 Tablespoon of olive oil and fry onions until soft and then add the chicken pieces. Save the marinade for later. Once chicken pieces are brown but not burnt about 5 minutes, add the shrimp and cook until pink (about 5 minutes) or less if using pre-cooked frozen shrimp. 3. Sirloin Steaks with caramelized onions

hmm yummy steaks.  Easy and quick lunch or dinner that equals to about 400 calories per serving with sides. 1.5 lb Sirloin steak season with salt and pepper. Grill on pan with olive oil, medium high 4 minutes on each side for medium. Serve on a plate. Serves 4 people. On a small pan, heat up 2 sliced yellow onions in olive oil or low fat butter. add Salt and 1 tsp minced garlic. Mix until onions start turning brown, add 1Tablespoon balsamic vinegar. Add to steaks.

Swiss Turkey Reuben on Rye

hmmmm ..I love a good Reuben.  This one was made with Hormel nitrate free turkey deli with light sliced Swiss cheese, saurkrat, horseradish sauce and Lite rye bread grilled on the stove.

Brown Rice Pilaf

Ingredients:  1 small yellow onion, chopped 2 tsp minced garlic 1 c chopped brocolli florets 1 T olive oil 1 cup Uncle Ben's brown rice 2 cups Organic chicken broth salt * pepper to taste 1 tsp lemon juice Directions: Heat up 1T of olive oil and add onions. After 4 minutes add garlic and rice and saute a little bit. Then Add broth. Let boil then turn down heat and simmer covered for 30 minutes. Add broccolli and mix and season to taste.  Cook until broccoli is tender. Makes about 4 cups cooked.

Salmon petites with brown rice broccoli pilaf

Salmon Petites Ingredients: 15 oz flaked Chicken of the sea wild salmon 1 cup Mashed Potatoes 1 cup brown rice cooked 1/2 cup chopped parsley bunch chives chopped 1 egg bread crumbs to coat olive oil to fry salt and pepper to taste Mix first 5 ingredients and flake with a fork.  Add egg and shape into patties, roll with bread crumbs. Heat up oil and fry salmon patties 4 minutes on each side or until light brown.

How to Cut and Serve Oranges

I first saw this fruit art when dining at Tako.  I thought it was an ingenius way of serving oranges with your meal.  Step1: Wash oranges and cut in half horizontally as shown Step2: Cut bottom edges of each half about 1 inch. Step3: Using a grapefruit knife or small sharp knife, cut out the orange in a circular motion from both ends. Step 4: Cut orange insides in fours. Step 5: Insert bottom part of oranges inside hollow orange shell and top the sliced oranges on top.

Mango Potstickers

I received a new cookbook last year from a good friend. It is called the Steamy kitchen cookbook by Jaden Hair.  I must say it only took my a year to finally get a chance to try the dumpling recipe. Assembling this was pretty easy as long as you have all the ingredients before hand. Ingredients: 1/4 head of cabbage (or pre-shredded cabbage pkg) 2 tsp salt 2 green onions (scallions) 1/2 lb ground turkey lean 1 1/2 Tbsp soy sauce 2 tsp rice wine 2 tsp rice vinegar 1 tsp sesame oil 1/2 mango chopped 1 Tbsp cornstarch Cornstarch paste: 2 T cornstarch plus 1/4 c water 1 pck round dumpling wrappers defrosted High heat cooking oil 1/2 cup Chinese dipping sauce (dumpling sauce by Kikkoman) Directions: 1. Chop cabbage or put thru a food processor. Add salt and leave for 10 minutes.  Then wring using either a paper towel or cheese cloth to squeeze the water. Put in a mixing bowl. 2. I cooked this during Christmas 11, as a healthy option to eating Ham or Pork. I garnished the finished product with ground peanuts and garlic. If you want it spicy you can add some black pepper or chili powder.
