30 days Bento

I just ordered this book on Amazon..so excited! So, for the last few days I've been scouring the internet for various how to's on the topic of bento boxes and I've found quite a few websites and youtube videos on the subject. While waiting for my book and tools to arrive, I thought I'd do my first attempt at a 1 level bento box today..:) Japanese fried chicken recipe: Cut up chicken thigh pcs (bite size) marinate in soy sauce, sake and garlic powder or minced garlic (1T each) Before frying in olive oil, coat evenly with pototo or cornstarch. Fry until all sides are golden brown. Onigiri (rice ball) Cook white rice in rice cooker. When cooked, scoop lukewarm rice in a Glad plastic wrap and using your hands....shape into a triangle. I used black sesame seeds for eyes, and carrot for the mouth and flower.

Apple Rabbits

Cebu Steamed Rice Dimsum style

This recipe was passed on to me by an old classmate. This was her recipe for the dimsum style rice topping served in Cebu. 1kg.Pork 55g.Onion 3/4 cup cooking oil 10g salt 10g msg 25g sugar 1/4cup whitehorse brand soy sauce 1/2galon water 100grams cornstarch 1cup water 1tbsp sesame oil 1kg.Rice Frozen peas Fresh chopped shrimp Mushrooms First fry old rice and add soy sauce then set aside-then Saute chopped onions and garlic, then add cube pork then diced shrimp and last the peas. Season with salt pepper. When pork is cooked add water and cornstarch, when sauce is thick add the sugar and soy sauce to taste, then lastly the sesame oil. Avatar, the last airbender cupcakes

For my son's birthday this year he wanted Avatar themed cupcakes. I could not find any avatar decorations except for the one on Ebay. What I did was cook vanilla cupcakes with white frosting, then spray painted each color to represent the elements of Fire, Water, Earth and Wind. Here are the finished products:

Thai Lettuce Wrap

Hmmm. This is a low carb recipe. It's good for those days you want something lean and healthy. Ingredients: 1 lb Ground turkey (dark meat, preferred) 1 scallion finely chopped 1 T garlic, minced 1T ginger grated or finely chopped 1/4 c red bell pepper 2 spring onions, sliced 1/2 c shredded cabbage (or tri color pre-shredded coleslaw in a bag) 1T soy sauce 1T fish sauce or patis 1T teriyaki sauce or oyster sauce 1c bean sprouts, optional 1 head iceburg lettuce (to wrap with), washed and cored olive oil Thai chili sauce for dressing, optional 1 egg, optional Directions: Brown in olive oil: scallions and ginger. Then add garlic and red bell pepper. Add ground turkey and brown. Add cabbage and spring onions. Season with soy sauce, fish sauce and teriyaki or oyster sauce. Crispy Kangkong (Spinach)

I was craving for some fried broccolli and spinach...so I thought I would make some as a side dish. Ingredients: 1 egg, beaten 1c cornstarch 1t salt 1/4 t ground pepper 3/4 c cold water Spinach leaves and parboiled broccoli florets Mix first four ingredients in a bowl. Dip vegetables then coat. Fry in a preheated pan with olive oil. Fry 2-3 min on each side until light brown. Drench in paper towel before serving. Dipping sauce: Mix together 1/4 c mayonnaise 1tsp maggi seasoning

Fluffy Sponge Cake

For my huband's birthday he requested me to make his favorite sponge cake that his mom used to make. Luckily, I was able to get the original recipe from his mom before they went on a cruise. So, here it is! My first batch was tricky, since I had to bake it for 60 minutes and I had to run out the door at 30 minutes to bring my son to karate class, and bake it again. So, I will probably make another batch this time with no interruptions. The difference between this and my favorite mocha cake is flavoring (coffee instead of lemon) and in this recipe there is no oil. Ingredients: 6 egg whites 1 tsps cream of tartar (Beat in a bowl together until stiff peaks form) In a separate bowl: 6 egg yolks, beat for 5 minutes then add 1 1/2 c sugar 1 tsp lemon extract 2t vanilla 1/3 c cold water 1 1/2 c cake flour 1t baking powder 1/2 t salt 1 t lemon peel grated Fold in egg white mixture gently and pour into your ungreased angel cake bundt pan. Mom's Cooking

I was watching the show on Lifetime called Mom's cooking. This recipe was inpired by that show. This is called Salmon Wellington. Intead of puff pastry, I accidently got the phyllo dough. But still turned out well. I would cook this for a party gathering again, since it was easy to make and it's healthy. Ingredients: Puff Pastry crust (1 sheet for each salmon) 1-2 Salmon filets lemon salt and pepper egg white wash frozen spinach Mozorella cheese Directions: Season salmon with salt and pepper, squeeze some lemon and let sit. Defrost the puff pastry and and unroll. Place on filet of salmon in each crust. Top with a slice of mozorella and frozen spinach. Fold like a burrito. Brush with egg white wash. Bake in oven Preheated 425 F for 30 minutes or until brown.
