Green Cucumber Drink

Using your juicer: in order 1 handful of spinach 1 bunch of green grapes 1/2 unpeeled cucumber 1 small green apple Forget your martini or tequilla. There's a green drink in town. It's the all green cucumber drink mixed with all the fresh goodness of grapes, apple, and spinach. All the more reason to drink up... According to everynutrient.com, cucumber is rich in Vitamin A,C & folic acid. I did not know that the skin, is rich in minerals such as magnesium (which will help you sleep like a baby), molybdenum,potassium and silica. Silica is a trace mineral that is said to strengthen our connective tissues in our bodies. Cucumber also good for sunburn & swollen eyes and prevent water retention. So drink up ladies!!

Got Juice?

So I finally got my first juicer for my birthday..and I love it! There were two main reasons why I wanted to get the juicer.. 1 . To eat more servings of raw fruits and vegetables. 2. To get my son (4 yrs old) to eat more vegetables through juicing because he kept on getting colds. So, on our first day of juicing..we decided to try all the fruits I had on hand together with celery and carrots. For the first time, my toddler drank the celery/grape juice without complaining, and drank all the carrot/ and apple juice and enjoyed it at the same time. This has become my sister's favorite to make over the holidays. This is a rich buttery icing over 2 meringue cookies with cashew powder. The cookie is then rolled in cake crumbs. I got this recipe from Nora Daza 10 years ago. Merinque: 1/2 c egg whites 1 C granulated sugar 1/4c All purpose flour or unbleached flour 1/2 c cashew nuts pounded until powdered and then sifted 1 c cake crumbs ( toasted Mamon ) Directions: Beat the egg whites until stiff. Add the sugar gradually. Fold in the cashew nuts. On a greased and floured cookie sheet, press mixture through a paper cone in a shape of an oval. Bake in a preheated oven 200F for 15 minutes or until lightly brown. Let cool. Spread icing on one cookie and cover with another. Spread icing on all sides and roll in cake crumbs. Refrigerate. Butter Icing: 3/4c sugar or powdered sugar 3/4 c evaporated milk 1 c butter Dissolve sugar in milk. Set aside. Cream butter until light and fluffy. Pour sugar-milk mixture in thin streams beat

Martha's Buttermilk Pancakes

I've saved this recipe for years from Martha Stewart.com and I love this recipe. Somehow I've never been able to achieve this same taste with other pancake mixes. The pancakes turn out to be like almost crepe like texture and moist which I like very much. I've modified the ingredients to suit my lifestyle. this yields nine 6 inch pancakes, and you may save some batter in a plastic container in the fridge: Ingredients: 2c Unbleached flour 2tsp baking powder 1tsp baking soda 1/2 tsp sea salt 3 Tbsp organic cane sugar 2 organic eggs, slightly beaten 3c buttermilk 4 Tbsp organic butter, melted plus 1/2 tsp for griddle Directions: 1. Heat griddle to 375 F . Whisk together all dry ingredients in a medium bowl. Add beaten eggs,buttermilk and 4 T melted butter. Whisk to combine. 2. Using 4 oz ladle pour pancake batter in griddle, about 2 1/2 minutes or when it begins to form bubbles. Flip and Cook until golden on bottom about 1 minute. 3. Keep finished pancakes in a warm 175 F oven
