I've saved this recipe for years from Martha Stewart.com and I love this recipe. Somehow I've never been able to achieve this same taste with other pancake mixes. The pancakes turn out to be like almost crepe like texture and moist which I like very much. I've modified the ingredients to suit my lifestyle. this yields nine 6 inch pancakes, and you may save some batter in a plastic container in the fridge:
Ingredients:
2c Unbleached flour
2tsp baking powder
1tsp baking soda
1/2 tsp sea salt
3 Tbsp organic cane sugar
2 organic eggs, slightly beaten
3c buttermilk
4 Tbsp organic butter, melted plus 1/2 tsp for griddle
Directions:
1. Heat griddle to 375 F . Whisk together all dry ingredients in a medium bowl. Add beaten eggs,buttermilk and 4 T melted butter. Whisk to combine.
2. Using 4 oz ladle pour pancake batter in griddle, about 2 1/2 minutes or when it begins to form bubbles. Flip and Cook until golden on bottom about 1 minute.
3. Keep finished pancakes in a warm 175 F oven.
