Pamela's Gluten FreeChocolate Chip Cookies

Ummmm. So delish! I baked Chocolate Chip (White and Semisweet)with Walnut gluten free cookies using Pamela's pancake and baking mix. They have a unique taste better than regular cookie mix. If you want to try it, pick Pamela's mix at your local Whole Food's Market or wherever they offer natural food items. Make sure you pick gluten free chocolate pcs too (not included in the mix). The recipe is on the box.

Ricotta Cheese cookies

These are my favorite Christmas cookies. The recipe once given to me by my co-worker Susan. I bake them every year..quite tedious yet this recipe yields about 4 batches. Ingredients: 2 cups sugar 1/2 lb softened butter (room temperature) 3 egg yolks (separate egg whites for icing) 1 tsp Baking soda 1 lb of Ricotta cheese (15 oz) Maggiano brand 1 tsp vanilla 4-5 c flour until dough is not sticky Directions: Cream butter and sugar in large bowl, using an electric mixer about 5 minutes. Add egg yolks, baking soda,vanilla. Mix by hand or with electric mixer. Add ricotta cheese, mix. Gradually add flour until firm and not sticky to touch. Using a spoon  drop small drops of dough on cookie sheet, you may add more flour to make it less sticky and shape them into balls about 2 inches. Press flat. Bake in a preheated 35oF oven for 13 min or until light brown underneath. Having icing ready before cookies are done. Icing: Beat 3 egg whites Add 1 lb (box) of Confect...
