This is one of my favorite type of alternatives to a fried eggroll. This is made with 80% vegetables and a bit of meat. I cooked this during Christmas 11, as a healthy option to eating Ham or Pork. I garnished the finished product with ground peanuts and garlic. If you want it spicy you can add some black pepper or chili powder.

Filling
2 cups potato, cubed ( or get the frozen shoestring french fries )
2 tbsp fish sauce (patis)
1 pkg  10 oz coleslaw mix or shredded cabbage
1 ½ cup carrots, julienned ( or get the precut packaged shredded carrots)
½ cup msg free chicken broth
½ cup peanuts, crushed
6 pieces Romaine Lettuce leaves
10 oz shredded chicken or get the canned chicken chunks premium  meat
1 pack extra firm tofu, sliced in strips (organic)==optional
1 cup shrimp, shelled and deveined
2 cups frozen green beans french style, thawed
1 medium sized onions, chopped ( or get the pre chopped red onions packaged)
½ cup cilantro, chopped= optional
3 tbsp garlic, minced


Wrapper : you can buy the organic Coconut wrapper or make your own ⬇️
1 cup organic unbleached flour
2 pieces raw organic eggs
2 tbsp Extra virgin olive oil
½ tsp sea salt
1½ cups milk

(double this wrapper recipe to accomodate all the filling)

In a bowl beat eggs, add milk. Gradually add flour so there are no lumps. Add salt and oil then beat.

In a non stick pan, spray some Pam or rub a bit of butter. Using a ladle, use 1 scoop in the middle then lift pan and spread the mixture all around like a crepe. When dry, (about 1 min) flip over to a large plate.

Sauce : Boil in saucepan until mixture is thickened.
1 tbsp soy sauce
½ cup brown sugar
2 cups broth
1 tbsp garlic, minced
2 tbsp corn starch (diluted in 4 tbsp water)


Directions:
saute garlic and onions until tender.Add the chicken until light brown, then add organic msg free chicken broth. Add potatoes &; shrimp. Add 1Tbsp of white cooking wine on shrimp and cook covered for 5 minutes. Add carrots, green beans until tender. Then add the rest of the ingredients about 2 minutes. Do not overcook cabbage, remove from heat right away.




Assemble filling in the wrapper as shown in picture.  Pour sauce on top. Add ground peanuts.

Jollibee fried peach mango pie

Hmmm.  I went to Jollibee in Jersey city, NJ to get one of the peach mango pies.  Unfortunately they were out, so I got the banana langka instead. Then I had one of those light bulb moments to make my own Peach mango pie.  Crazy huh?  The important thing was the filling.  The filling would be a little bit hard if the yellow ripe mangoes were out of season.  Luckily Del Monte now sells them in the little plastic cups.  Filling: 1 C of yellow sliced and cubed mangoes, ripe and peaches  or Del Monte cubed mangoes and peaches with syrup 2 T peach jam preserves 1T white sugar In a little saucepan, cook the mangoes in sugar for 1 minute in medium heat until mangoes soften.  Add the peach jam and mix. Mom's Cooking

I was watching the show on Lifetime called Mom's cooking. This recipe was inpired by that show. This is called Salmon Wellington. Intead of puff pastry, I accidently got the phyllo dough. But still turned out well. I would cook this for a party gathering again, since it was easy to make and it's healthy. Ingredients: Puff Pastry crust (1 sheet for each salmon) 1-2 Salmon filets lemon salt and pepper egg white wash frozen spinach Mozorella cheese Directions: Season salmon with salt and pepper, squeeze some lemon and let sit. Defrost the puff pastry and and unroll. Place on filet of salmon in each crust. Top with a slice of mozorella and frozen spinach. Fold like a burrito. Brush with egg white wash. Bake in oven Preheated 425 F for 30 minutes or until brown.

Mango Cream Pie

For mother's day, a friend of mine gave me 2 yellow mangoes. Mangoes has to be my favorite fruit. My brother shared with me a mango cream pie recipe along with my friend's mother who made it out of mango puree. This recipe is sort of a combination of both. The best mango cream pie has yet to be from Red Ribbon bakery...sweet crust, mangoes and whipped cream. For good results get sweet ripe mangoes for this recipe or add some white sugar to it. If you can't find any good mangoes, you can also try mango puree and just mix it with the cream mixture. Ingredients: 2-3 cups of fresh yellow mangoes, ripe and sweet..cut thinly 1c organic heavy whipping cream 1 small can condensed milk 1/2 c hot water or hot mangoe puree (heated up) 2 sachets of Knox white gelating powder, (2) Pilsbury ready made pie crustor or graham cracker crust, baked according to directions on package 1 tsp vanilla flavoring 1 Tbsp crushed graham cracker crumbs ...
