Chocolate Cream Pie!

This was a picture from Thanksgiving 11. I posted the recipe in one of my earlier blog posts... For this recipe, I used semi sweet chocolate chips instead of grating unsweetened chocolate , and I lessened the sugar content to maybe 1/2 c or to taste. Also instead of 1 egg I used 3 beaten egg yolks for this recipe.

Green Smoothie

Photo: Typorama  On this year's birthday I made a trip to Lansdale to Arnold's Way cafe. I tried their famous green smoothie. People travel all over to get a hold of Arnold's Way smoothies and their only vegan menu such as their banana ice cream (no dairy)... I got this recipe from Arnold's website, so if you want to start a green smoothie revolution...pass this on to your friends especially those battling with cancer or chronic diseases. Chop and peel: 1 apple 1 ripe pear 2 ripe bananas 1 handful of greens (no stems) like spinach 16 oz water mixed with ice Mix everything in a blender until smooth. Serves 2.

Baked Sweet potato in caramel

Preheat oven to 400 F. Peel 1 big Sweet potato and cut into cubes. Pour melted butter in a square pyrex pan 9x9. Add sweet potatoes. Top with 1/4 cup brown sugar (dark). Bake for 30 minutes, then stir. Top with minature marshmallows, bake additional 20 minutes or until potatoes are tender.

Salisbury Steak

Ingredients: 2 pcs of Salisbury steak 1-2 T olive oil for frying sea salt & Pepper for seasoning Sauce: 1 T butter 1 c vegetable broth msg free 2 pcs shitake mushroom sliced 1 T cornstarch (added to cold broth) 1/4 c green peas frozen, thawed Directions: Fry the salisbury steak on a cast iron pan. Season with salt and pepper until brown. Place steaks in a pyrex 9x9 square baking pan. Set aside. Using the same pan, add butter to the drippings. When melted add shitake mushrooms and cook until tender under medium low heat. Add the broth (dissolved the cornstarch) and green peas. Let boil for 3 min until thickened. Pour Sauce over the steaks. Put in a preheated oven 350 F, cook for 30 minutes.

Filipino chicken barbecue

Mix Marinade: 3/4 cup soy sauce 1 head garlic minced 1 onion chopped finely 1/4 c lemon juice 1/2 can of beer or sprite 1 tsp black pepper ground 5 T organice brown sugar 1 1/4 c banan sauce/ketchup reserve 1/4 c for basting Add 2 lbs of chicken thighs cut into cubes. Refrigerate and marinade for 30 minutes or while you set up the charcoal grill Thread through bamboo skewers that have been soaked with water. Grill about 10 minutes on each side and baste with sauce. Serve with white rice.  

Home Made Iced Tea

Photo: Typorama  Summer is here and so are the iced cool beverages. If you buy them on a daily basis the costs can add up. A brewed Iced Tea at Dunkin can easily cost you 99 cents (with coupon) and up. Not only are these commercial beverages loaded with too much sweetener, the bottled beverages are also loaded with High Fructose Corn syrup. So, solution is to brew your own iced tea from home and save $$ and make it healthy with the following ingredients: Ingredients: 5 Bags of Lipton cold brew ice tea bags or Green tea (any brand) Lemon slices or Tangerine 12 oz Hot Water 2-3 T of Raw organic Honey or 5 sachets of Stevia to taste add more if needed Ice cubes  Filtered water  A pitcher Directions: Brew tea in a Large glass container in hot water and tea bags for 5 minutes. Then remove tea bags, mix sugar or honey until dissolved and pour into another glass container filled with ice. Add lemon slices or tangerine. You can add some mint leaves for flavor. Jillian Michael's Ultimate Healthy Brownie

Today I tried Jillian Michael's ultimate healthy brownie from her website. It was easy to make and surprisingly "cakey" and light fluffy texture. The taste of the raw honey was definitely overpowering and sweet, so make sure you choose a good quality honey. I definitely would want to try adding some dark chocolate chips in the batter next time for more texture, lessen the honey to maybe 1/2 cup and increase my cocoa powder to 1/2 cup. Ingredients Olive Oil Spray for pan 2/3 cup mild honey (preferably organic) 1/3 cup natural, unsweetened cocoa powder 1/2 cup white, whole wheat flour 1/4 tsp aluminum free baking powder 1/4 tsp baking soda 1/2 cup unsweetened applesauce 2 TBSP olive oil 1 large egg, at room temp 3/4 tsp pure vanilla extract Directions Makes 16 (2") brownies Preheat oven to 350.
