Easy 5 minute Stir fry vegetable meal

I've just recently discovered the convenience of frozen vegetables. Thanks to Jillian Michael's cookbook. In the past most of my fresh veggies would just stay in the crispser till they rot. You get it, I just don't have that much time to prep for vegetables except to juice them. Another option for the mixed vegetables would be the frozen brocolli and stir fry tofu, mix with brown rice. ** Ingredients: 2 c Cooked Brown Rice 1 package frozen Bird's Eye asparagus stir fry vegetables with pasta *if u want to chop your own vegetables, julienned carrots, cut asparagus tips, cut green beans 1 T sesame oil salt and pepper optional: leftover strips of steak or grilled chicken Directions: Heat oil in a wok, heat up the pcs of meat and brown. Add the defrosted package of vegetables. Stir fry over high heat, continuosly stirring for 5 minutes. Seaon with salt and pepper. When vegetables are tender, turn off heat. Serve over 1 c of brown rice.

Red Velvet Cupcake

So I've been really craving for a red velvet cake. After watching Bethanny, getting married on Bravo TV..(her wedding cake was a red velvet cake) I have been trying to set aside this red velvet craving in my mind. Unfortunately, there are no bakeries nearby selling red velvet cakes, I was thinking of buying a cake mix (none i could find in the store). After 2 weeks, I read this article...and viola! Mango Cream Pie

For mother's day, a friend of mine gave me 2 yellow mangoes. Mangoes has to be my favorite fruit. My brother shared with me a mango cream pie recipe along with my friend's mother who made it out of mango puree. This recipe is sort of a combination of both. The best mango cream pie has yet to be from Red Ribbon bakery...sweet crust, mangoes and whipped cream. For good results get sweet ripe mangoes for this recipe or add some white sugar to it. If you can't find any good mangoes, you can also try mango puree and just mix it with the cream mixture. Ingredients: 2-3 cups of fresh yellow mangoes, ripe and sweet..cut thinly 1c organic heavy whipping cream 1 small can condensed milk 1/2 c hot water or hot mangoe puree (heated up) 2 sachets of Knox white gelating powder, (2) Pilsbury ready made pie crustor or graham cracker crust, baked according to directions on package 1 tsp vanilla flavoring 1 Tbsp crushed graham cracker crumbs ...

MEATRoll

When I was a little girl, I used to eat the yummy meat filled bread pastry called meatroll in Angelica's bakery in JOnes Ave. Inside would be any kind of meat from Chicken Asado, adobo or beef. Thank God for breadmakers, I can make one of my own from home. Dough recipe: make the basic pandesal dough recipe. (From my previous post) I used leftover Chicken Adobo recipe (shred chicken meat and add boiled egg) or left over beef roast, cut in shreds ( Corned beef recipe .) After following pandesal procedures for rising the dough. Grab a fist size dough, flatten with your hand and add 1T of the meat preferred and boiled egg. Gather edges and seal to shape like a ball. Roll in breadcrumbs. Lay in pan, let rise 30 minutes covered just as you would do for a pandesal. Bake 375F preheated oven for 15-20 minutes until brown.

Yummy treats

Here are recent pics of a yummy treat I ate while dining at the Brick Hotel in Newtown. The pear&apple salad with butter lettuce, walnuts, pears, apple slices and topped with a special dressing I've never tasted before...Pear Champagne vinagairette dressing...Delish!!!($7) I have been craving for this salad..so I will try to recreate it at home. I could not find this special dressing in my local store, so I had to specially order it from Chef Central (Perfect Pear dressing). The other pic, is a sinful lunch I picked out..grilled pastrami Reuben sandwich with saurkraut and swiss cheese. ($10).

Working Woman Special: Beef Stroganoff

To celebrate my official entry into the working woman's work force, I am cooking my crockpot special. With this recipe, you can just leave it and go. You can come home to a nice aroma of beef stroganoff after work. Hmmm. Ingredients: 1-2 lbs beef stew chunks, organic 1 can semi condensed Amy's mushroom soup mixed with 1 c organic sour cream 1 cup sliced mushrooms, portabello 1/2 white onion sliced salt and pepper Cornstarch oil butter white wine Directions: Season beef with sea salt & pepper. Coat with 3T cornstarch. In a frying pan, add 1-2T olive oil. Brown beef on all sides, and add to crockpot. Add 1T organic butter on pan, and brown mushrooms and onions. Add 1T white wine, optional. Add all ingredients to crockpot. Cover and cook on low for 6 hours. Top over cooked fetuccini noodles or white rice.

Steamed mini muffins (Quick Puto recipe)

This is great for parties. My husband's cousins always bring this puto dish at every gathering. It is just not complete without it. The good news about this recipe is, that it is simple and quick, even a novice can do it. This is not your rice flour muffin, though. For this recipe, this is HALF of the normal recipe. If you are planning to make this for a party, then double the recipe. I try to use organic ingredients as possible... INGREDIENTS: Combine in a big bowl: 1 cup Organic Pancake Mix (I used Vermont Buttermilk & Honey Pancake Mix) or if unavailable use Bisquick 1/2 cup Organic milk (I used reduced fat, but you may use whole milk) 1/2 cup unbleached white sugar or Powdered Lakanto equivalent for sugarfree  1 organic egg few drops (1/8 tsp) of organic vanilla, optional few drops of organic food coloring, for each batch that u like to color the muffin (or omit ) Mix with a wooden spoon. Prepare your steamer. Pour into greased mini muffin cups, 2/3 way full. Steam covered ...
