Steamed mini muffins (Quick Puto recipe)






This is great for parties. My husband's cousins always bring this puto dish at every gathering. It is just not complete without it. The good news about this recipe is, that it is simple and quick, even a novice can do it. This is not your rice flour muffin, though.



For this recipe, this is HALF of the normal recipe. If you are planning to make this for a party, then double the recipe. I try to use organic ingredients as possible...




INGREDIENTS:

Combine in a big bowl:

1 cup Organic Pancake Mix (I used Vermont Buttermilk & Honey Pancake Mix) or if unavailable use Bisquick



1/2 cup Organic milk (I used reduced fat, but you may use whole milk)



1/2 cup unbleached white sugar or Powdered Lakanto equivalent for sugarfree 



1 organic egg



few drops (1/8 tsp) of organic vanilla, optional



few drops of organic food coloring, for each batch that u like to color the muffin (or omit )


Mix with a wooden spoon. Prepare your steamer. Pour into greased mini muffin cups, 2/3 way full. Steam covered for 20 minutes..
👉🏻 To use in a Multipot Pressure cooker, use a trivet, with water underneath. Use a steam rack and pour your mixture in silicone muffin containers. Cover with foil & seal. High pressure for 20 minutes.

Mango Cream Pie

For mother's day, a friend of mine gave me 2 yellow mangoes. Mangoes has to be my favorite fruit. My brother shared with me a mango cream pie recipe along with my friend's mother who made it out of mango puree. This recipe is sort of a combination of both. The best mango cream pie has yet to be from Red Ribbon bakery...sweet crust, mangoes and whipped cream. For good results get sweet ripe mangoes for this recipe or add some white sugar to it. If you can't find any good mangoes, you can also try mango puree and just mix it with the cream mixture. Ginataang Kalabasa at Sitaw with Hipon (Shrimp, Squash & Green Vegetables in Coconut Milk)

Ginataang Kalabasa at Hipon Ingredients 1 c Peeled Raw Shrimp 1/2 White Onion Chopped 1T Minced Garlic 1T Bagoong Alamang (Shrimp Paste) 1 can Coconut Milk 3 c Kalabasa (Orange Squash) in cubes (3 inches) 1 c Green Beans or Sitaw cute in 3 inches length 1/2 c Spinach or Green leafy vegetable 1 T oil for pan Cooking Directions Heat oil in a deep pot. Saute Onions and Garlic to soften. Add Shrimp until it turns pink, remove shrimp and set aside in a bowl. Add bagoong to the pot and pour coconut milk. Mix.
