A Healthy Smoothie

Nowadays, it's almost impossible to cram your healthy 3-5 servings of fruit if you are on the go. I trade in the soda for one of the Superfruit smoothies in the mall. Yet if I'm at home, I could easily make my own smoothie if you have all these ingredients readily available in your fridge. Ingredients: 1 medium banana, sliced 1/2 c Bryers all natural strawberrie yogurt 1/4 c frozen mangoes optional: handful of berries like blueberries or strawberries, 1 T of pineapple chunks 2T organic honey 1/2c water and ice chunks Directions: Blend all the ingredients in a Magic bullet or blender. Taste. Add some organic sugar if needed. For a boost, try adding 1 tsp of vitamin c powder.

Raw Apple Pie

Award winning recipe from the Lupus recovery diet book by Jill Harrington.. 3-4 apples, shredded (food processor) Filling: 4-6 fresh dates, pitted and soaked for 1-3 hours 2T fresh lemon juice 1/2 tsp cinammon or 1/2-1 tsp applie pie spice Crust: 2 c fresh dates, pitted and chopped 1/2 tsp cinnamon Blend the filling ingredients (dates,lemon, cinnamon) together to make a thick paste. Stir in with the shredded apples. Crust directions: Make crust by putting dates and cinnamon in a food processor. A round ball is formed within a minute. Press the ball of dates out into a pie pan, formin the crust. Refrigerate to let the crust harden. Put the filling on refrigerated pie crust, you may decorate with thinly sliced apples on top, and with some nuts.

A New Baked Chicken Recipe

Got this yummy recipe from my sister who calls this Stephenson's baked chicken with butter and cream. Pretty simple ingredients, with an added gravy which she recommends serve with mashed potatoes. I tried this recipe today, and it was smelling good in the kitchen. Can't wait to see what my husband's (my official taste tester) reaction would be.. The chicken turns out crunchy.. In making the chicken, I added a few drops of lemon juice on the chicken prior to dredging in the flour. Ingredients: 1/2 C Flour (unbleached organic flour) 1-1/2 tsp sea salt 1/2 tsp paprika 1/4 tsp pepper 1 cut-up chicken or pieces (organic free range)I recommend taking the skin off or else your gravy will be oily 1/4 c organic butter 1-1/2 c hot water 1/2 c nonfat dry milk powder ( ) The results are better than using regular milk Dip chicken in water; coat with mixture of flour and seasonings. I thought for my actual birthday I would try make the traditional Filipino mocha cake recipe from my Nora Daza cookbook. It calls for special ingredients such as cake flour, which to my further research tells me that it makes the cake softer and lighter. Unlike other mocha cake recipes I found, it also calls for creme de cacao...which is a liquer I have to buy from the liquor store...which tastes like white chocolate and vanilla essence... Unfortunately, my experiment failed..the cake was more of a taizan or mamon cake...and my icing was too liquidy.. and not at all the one I was visualizing of my previous mocha cakes that I have tasted from NJ. Empanadas

There are many versions of empanadas, and as you practice you can experiment with different fillings and versions. You can use chicken, beef or pork. Some I've tasted some with cheese. However, if this is your first time making it..you can try this recipe : Filling: 1/4 c cooking oil 4 cloves garlic minced 1/2 c white onion chopped 1 c potatoes , peeled and cubed 1 lb ground turkey (93/7 not lean) or ground beef 1/4 c raisins 2 tsps Kikkoman soy sauce 1 tsp salt 1/4 c green peas 1/3 c msg free chicken stock Directions: Heat cooking oil in a large wok. Brown garlic lightly add chopped onions and cubed potatoes. Cover and allow to cook for one minute. Add the ground meat, Brown and then add the rest of the ingredients. Cover until potatoes are done, then uncover and simmer so the stock evaporates. Let cool before adding to pie crust. Shaping the empanadas: You will need 2 boxes of Pilsbury pie crust dough. In the Philippines, we celebrate our Christmas dinner with the Stuffed Chicken and Embotido which my mom would make by hand. I've never tasted anyone else's embotido as good as the one our family used to make, so I've decided to preserve my mom's recipe in this blog . It's only 5 more days till Christmas, and well..as I share with you our recipe, I've included my healthy version as well. Embotido (is the filipino version of meatloaf) which is used as stuffing for the chicken, and the rest rolled out and steamed as meatrolls.
