Mango Cream Pie

For mother's day, a friend of mine gave me 2 yellow mangoes. Mangoes has to be my favorite fruit. My brother shared with me a mango cream pie recipe along with my friend's mother who made it out of mango puree. This recipe is sort of a combination of both. The best mango cream pie has yet to be from Red Ribbon bakery...sweet crust, mangoes and whipped cream. For good results get sweet ripe mangoes for this recipe or add some white sugar to it. If you can't find any good mangoes, you can also try mango puree and just mix it with the cream mixture. Ingredients: 2-3 cups of fresh yellow mangoes, ripe and sweet..cut thinly 1c organic heavy whipping cream 1 small can condensed milk 1/2 c hot water or hot mangoe puree (heated up) 2 sachets of Knox white gelating powder, (2) Pilsbury ready made pie crustor or graham cracker crust, baked according to directions on package 1 tsp vanilla flavoring 1 Tbsp crushed graham cracker crumbs ...

MEATRoll

When I was a little girl, I used to eat the yummy meat filled bread pastry called meatroll in Angelica's bakery in JOnes Ave. Inside would be any kind of meat from Chicken Asado, adobo or beef. Thank God for breadmakers, I can make one of my own from home. Dough recipe: make the basic pandesal dough recipe. (From my previous post) I used leftover Chicken Adobo recipe (shred chicken meat and add boiled egg) or left over beef roast, cut in shreds ( Corned beef recipe .) After following pandesal procedures for rising the dough. Grab a fist size dough, flatten with your hand and add 1T of the meat preferred and boiled egg. Gather edges and seal to shape like a ball. Roll in breadcrumbs. Lay in pan, let rise 30 minutes covered just as you would do for a pandesal. Bake 375F preheated oven for 15-20 minutes until brown.

The pear&apple salad with butter lettuce, walnuts, pears, apple slices and topped with a special dressing I've never tasted before...Pear Champagne vinagairette dressing...Delish!!!($7) I have been craving for this salad..so I will try to recreate it at home. I could not find this special dressing in my local store, so I had to specially order it from Chef Central (Perfect Pear dressing). The other pic, is a sinful lunch I picked out..grilled pastrami Reuben sandwich with saurkraut and swiss cheese. ($10).

Steamed mini muffins (Quick Puto recipe)

This is great for parties. My husband's cousins always bring this puto dish at every gathering. It is just not complete without it. The good news about this recipe is, that it is simple and quick, even a novice can do it. This is not your rice flour muffin, though. For this recipe, this is HALF of the normal recipe. Week 2: Salmon in Lemon Brodetto sauce over Peas Puree

Siopao (Steamed bun) 2 Dough recipes

I tried 2 different recipes 2 days earlier, and I've finally chose this one as finally the one that works to my taste. Be mindful of the oil or shortening you use. EVOO (olive oil) will give a mild flavorful taste to the bun, you can settle with a vegetable oil that won't give off any tastes..maybe extra light or corn oil perhaps. You can also use softened organic unsalted butter. You want the dough to be sweet. The secret to a succesful siopao, is Patience and Practice. Don't forget to taste your dough, you can steam a small bit. Taste the filling as well before you make large batches. Ingredients: This will only yield 4 buns, once you have succesfully made 1st batch..you can make more. 1 1/2 c Unbleached or APF flour 1 package active dry yeast (smallsachet, estimate 3 tsps. ) 1/4 c sugar 1/2 c lukewarm water 2T vegetable oil or softened butter Heat 1/2 c water in microwave 40 seconds.
