Filipino chicken barbecue

Mix Marinade: 3/4 cup soy sauce 1 head garlic minced 1 onion chopped finely 1/4 c lemon juice 1/2 can of beer or sprite 1 tsp black pepper ground 5 T organice brown sugar 1 1/4 c banan sauce/ketchup reserve 1/4 c for basting Add 2 lbs of chicken thighs cut into cubes. Refrigerate and marinade for 30 minutes or while you set up the charcoal grill Thread through bamboo skewers that have been soaked with water. Grill about 10 minutes on each side and baste with sauce. Serve with white rice.  

Home Made Iced Tea

Photo: Typorama  Summer is here and so are the iced cool beverages. If you buy them on a daily basis the costs can add up. A brewed Iced Tea at Dunkin can easily cost you 99 cents (with coupon) and up. Not only are these commercial beverages loaded with too much sweetener, the bottled beverages are also loaded with High Fructose Corn syrup. So, solution is to brew your own iced tea from home and save $$ and make it healthy with the following ingredients: Ingredients: 5 Bags of Lipton cold brew ice tea bags or Green tea (any brand) Lemon slices or Tangerine 12 oz Hot Water 2-3 T of Raw organic Honey or 5 sachets of Stevia to taste add more if needed Ice cubes  Filtered water  A pitcher Directions: Brew tea in a Large glass container in hot water and tea bags for 5 minutes. Jillian Michael's Ultimate Healthy Brownie

Today I tried Jillian Michael's ultimate healthy brownie from her website. It was easy to make and surprisingly "cakey" and light fluffy texture. The taste of the raw honey was definitely overpowering and sweet, so make sure you choose a good quality honey. I definitely would want to try adding some dark chocolate chips in the batter next time for more texture, lessen the honey to maybe 1/2 cup and increase my cocoa powder to 1/2 cup. Ingredients Olive Oil Spray for pan 2/3 cup mild honey (preferably organic) 1/3 cup natural, unsweetened cocoa powder 1/2 cup white, whole wheat flour 1/4 tsp aluminum free baking powder 1/4 tsp baking soda 1/2 cup unsweetened applesauce 2 TBSP olive oil 1 large egg, at room temp 3/4 tsp pure vanilla extract Directions Makes 16 (2") brownies Preheat oven to 350. Home Made Chicken Pot Pie

Gravy: 4 T organic salted butter, melt in pan 4T unbleached flour mix with butter 2 C organic chicken broth, and add more if too thick (stock from the chicken below) turmeric for color sea salt to taste Stir and let boil under medium low heat and whisk until well blended. Add sea salt for taste. Let cool. Pie crust (makes 3 small pot pies) In a food processer: 4 oz low fat cream cheese, cut in pieces 1/2 stick organic salted butter 3/4 unbleached flour pulse food processor until sandy. Add 1 T flour and 1/2 egg yolk. (reserve other half for egg wash) Add more flour if necessary and shape into a ball. Flatten into a plate size and cover with saran wrap and put in refrigerator until ready to bake. Filling: Boil 4 chicken thighs in chicken stock enough to cover chicken for 30-45 minutes. Strain stock, season with salt. Debone chicken and shred to pieces without skin. Add frozen mix vegetables about 1/4 c per pot pie. Edible Fruit Boquet

This Thanksgiving, I decided to study how to make the edible fruit into flower arrangements as a healthier alternative to the sugar laden dessert. Some books I recommend about the subject of sugar and it's impact on your health and weight is: Sugar Blues by William Dufty' This is Why you are Fat by Jackie Warner. So, if you are interested in making your own healthy fruit boquet..it's cheaper than buying a $40 arrangement from Edible Fruit Arrangement. All you need is the following fruits (buy 2 days prior) pineapple cantaloupe or honeydew green or dark purple grapes strawberries Materials: 10 inch bamboo skewers styrofoam ball (from a craft store) but I like to use playdough, or lettuce head or florist foam as alternative flower shaped cookie cutter melon baller potato crisp cutter (optional) a decorative mug for small arrangement or a bigger pot for more fruits white cellophane and ribbon Directions: 1 day before: With skin intact---Cut pineapple into 1/2 inch thick circle...

bento day #6

Yesterday, I was able to buy a piggy shaped frying pan mold from Marshalls (yay)..Today's bento box is Japanese fried chicken fried rice pig shaped omelet cucumber and cherry tomatoes grapes Recipes: Japanese fried chicken 1 chicken thigh, cut and deboned to bite size pcs marinate for 15 min 1T soy sauce 1T rice wine 1 tsp honey 1 tsp ginger juice salt and pepper Coat in flour and deep fry over medium heat until brown. Fried rice: Cut turkey ham (natural by Hormel) into small squares and fry in a little olive oil when caramelized or ligght brown, add 1 C of white rice (cooked). Season with salt and pepper. Add 1 stem of green onions chopped. Make a well in the middle, add a pat of butter. Add 1 egg beaten, and cook in the middle and scramble with a spatula. Mix with the rest of the rice.

bento box #5 Kawaii!!!

i used the egg molder to make these cute rice shapes of a bear and rabbit. I baked my son's favorite Mrs. Paul's fishsticks and then made a fruit kebab of raspberries, strawberry, grapes, kiwi and cantaloupe. Side dish was spinach dressed with soy sauce and black sesame seeds. :)
